an eggcellent sandwich created with an underground goods loaf. whatever you do, don't skip the capers...seriously.
egg salad ingredients
5 boiled eggs (we recommend a softer boil, around 7 minutes)
1 stalk of celery, diced
1/3 cup white onion, diced
1 tbsp fresh dill, chopped
1 tbsp fresh chives, chopped
1 tbsp capers, chopped
2 tbsp mayo
salt + pepper
sandwich assembly
underground goods loaf (try our seeded whole wheat or sour-ish loaves)
romaine lettuce
tomato
instructions
boil eggs per linked instructions. while cooking, dice celery, white onion, dill, chives + capers.
chop boiled eggs + add all chopped ingredients to a large bowl and mix. the salad will start looking creamy due to that that perfectly soft boiled yolk. add the mayo 1 tbsp at a time - the egg salad should be creamy, not wet. finish with salt + pepper to taste.
toast two slices (or one slice if open faced is more your style!) of our seeded or sour-ish loaf, add a thin layer of mayo to each slice + assemble with lettuce and tomato.
